Wet Burritos - Beltline Bar style!

The Beltline Bar in Grand Rapids, Michigan is the home of the wet burrito. The story goes that a particularly rude customer sent a burrito back to the kitchen several times, complaining that the burrito was too dry. Apparently, the cook was having a particularly bad day, too. After attempting to correct the problem several times, the last time it was brought back to the kitchen, the cook mixed some brown gravy and taco sauce together, poured the sauce over the burrito, sprinkled some cheese and lettuce on top and sent the server back to the table with the message that now it was a “wet” burrito! The customer was thrilled with the idea of a “wet” burrito, and loved it. From that day forward, the new “Wet Burrito” has been one of their most popular menu items!

Being from the Grand Rapids area, I grew up eating wet burritos. It was not until my husband joined the Army that I really realized that NO ONE outside of Michigan had any clue what a wet burrito is! Needless to say, nowadays, if I want a wet burrito, I have to make it myself! Here is how to do it!

Wet Burritos

Flour Tortillas – Burrito size
Taco Meat (Beef, chicken, whatever you prefer)
Refried beans
Shredded Cheese
Salsa
Taco Sauce
Brown Gravy
Shredded Lettuce

1.) Preheat oven to 400 degrees.
2.) Prepare the taco meat, according to the directions on the seasoning.
3.) Heat the refried beans.
4.) Lay tortilla on a flat surface.
5.) Place taco meat, refried beans and shredded cheese in the center of the tortilla.
6.) Fold tortilla around toppings to make a burrito.
7.) Repeat steps 1-5 to make 4-6 burritos.
8.) Place burritos into a rectangular baking dish.
9.) In a medium sauce pan mix equal parts, taco sauce and brown gravy. Cook according to the directions for the gravy.

10.) Pour gravy mixture over burritos.
11.) Place in oven and bake for 45 minutes.
12.) Remove pan from oven, place burritos on plates, top with shredded cheese, lettuce and salsa. Sour cream can be added if desired.
