The World of Tortillas!

I wanted something a little different for dinner tonight, so I opted for breakfast burritos! They are super easy and fast to make, and a great one pan dish!
I cooked up some hash-browns and set them aside first so that they would stay crispy. Then, I scrambled a dozen eggs with a can of drained Rotel tomatoes and chilis, some onions and a pound of smoked sausage. I broke up the hash-browns, added them to the pan to re-heat and warmed up a few tortillas.
Pile the filling into the tortillas, top with a little chipolte sauce, fold and eat!
The entire meal takes about 20 minutes to prepare and serve and is always a hit in our house. My kids tend to tear them apart to get to the filling, and my husband adds jalapeno peppers to his while I add cheese to mine. They can easily be adapted to suit anyone's tastes and are great with ham, bacon, sausage or even leftover steak! For a milder flavor, omit the chipolte sauce, and for a more savory flavor, add holandaise sauce.
Personally, I will wrap almost anything in a tortilla. I make burritos out of anything, especially things that are potentially messy or "icky" looking (my daughter's latest favorite reason for not eating something). Tortillas are a fix-all for many of my cooking disasters that my family might complain about otherwise!
