Spaghetti and Seasoned Bread

January 13th 2012 00:22
Dinner tonight was super easy, thanks to a little planning! My husband makes AMAZING spaghetti sauce, but being in the Army makes it hard for him to make it during the week due to his unpredictable schedule. So, I had him make up a double batch this past weekend and froze it!

Spaghetti Sauce

2 cans of tomato sauce
1 can of tomato paste
1 can of tomato paste
1 1/2 pounds of hamburger
1 cup chopped fresh onion
1 can of mushrooms
Oregano
Parsley
Thyme
Garlic
Onion powder
1 tsp sugar or artificial sweetener

1.) Brown the hamburger in a skillet with the fresh onion and drained mushrooms.

2.) Empty the canned tomato products into a large sauce pan.
3.) Heat the tomato products in the sauce pan until they begin boiling.
4.) Add the hamburger mixture to the sauce pan.
5.) Gradually add seasonings to taste.
6.) Allow the sauce to simmer for at least an hour (If you will be freezing it for later use 30 minutes is plenty)
7.) After removing from heat, add the sweetener to the sauce.

The sweetener is used solely to cut the acidity of the tomatoes. You will not taste it, but it does cut down on the heartburn and stomach irritation that can result from tomato based sauces!

Spaghetti is not spaghetti in our house without my seasoned garlic bread! It takes 15 minutes and tastes better than any store-bought garlic bread I've ever had!

Seasoned Garlic Bread

1 loaf of french bread
1 stick of butter or margarine
2 tsp crushed rosemary
2 tsp onion powder
1 tbsp garlic
1 tsp parsley
1 tsp oregano
2 tbsp minced onion
Aluminum foil

1.) Place the french bread in the center of a piece of aluminum foil; fold the aluminum foil to form a "boat" for the loaf of bread to sit in.

2.) Slice the loaf of bread into thick slices without slicing through the bottom crust.
3.) In a glass measuring cup, melt the butter or margarine in the microwave for 30 seconds (when stirred, it should appear creamy and cling to a fork).
4.) Add all of the seasonings EXCEPT the minced onion to the measuring cup and stir until all seasoning are dispersed throughout.
5.) Using a basting brush, split the bread at each of the slices and coat both sides of the bread with the butter mixture.
6.) Baste the top of the bread with the remaining butter mixture and sprinkle with minced onions.
7.) Place in oven and bake at 350 degrees for 10-15 minutes.

This dinner is amazing, and if the sauce is made ahead of time, it cooks up really fast! If you are running short on sauce or forget to make the bread, the cooked pasta and sauce can be mixed together in a baking dish, sprinkled with Parmesan cheese and baked with the bread. This will allow the pasta to absorb the flavor of the sauce better!
