I am not a superhero!

Someone accused me today of being "Super Wife". I am NOT a superhero! Well, not any more than our mothers, grandmothers, or aunts were. I do not have any more hours in a day than anyone else, I do not move at warp speed and I cannot leap tall buildings in a single bound. I am just a normal woman that manages her time well.
I am a SAHM, which means that I probably DO spend more time at home than most women these days. However, I am also a full-time student (I should receive my BA in Psychology Aug. 2012), a soldier's wife (wait, didn't I say that I did NOT have a full time job???), mother of 2 children too young to go to school, a freelance writer and a blogger. Most days, I WISH for a single full-time job!
That being said, I DO manage my time well. I bake things from scratch, I cook home-cooked meals (I tried boxes and mixes for a while, but no one liked them), I keep my pantry fully stocked and organized and I make most of our snacks from scratch as well. Often, I do ALL of these in a single day. The trick is planning.
As long as I am going to make a mess of my kitchen, I may as well do it right! To bake anything involving yeast, I know that I will have 1 1/2 hours for the first rising and an hour for the second. During the first segment, I can bake a complete double batch of cookies, a cake, brownies or any other sweet treat that takes a while. During the second segment, I have time for a quick batch of Chex mix, granola or chips! Then, during the 40 minutes that the bread takes to bake, I can cook dinner. 2 loads of dishes after dinner, and my kitchen looks like it did before the frenzy, but with a lot more food!
If fried foods are more to my liking for a full day in the kitchen, I like to start with french fries or potato chips. Once the potatoes are cut, they need to soak in ice water for at least an hour. This gives me time for tortilla chips, donuts, chimichangas, Cedar Dogs (that is a local treat, a hot dog wrapped in a flour tortilla with cheese, wrapped in bacon and deep fried), corn dogs or any other quick fried foods.
The challenge to accomplishing a large number of tasks in a short amount of time is always time-management and planning. Just because something needs to set, rise, cool or soak does not mean that there is nothing to do!
