Breakfast Burgers for Dinner

One of our favorite dinners around here is breakfast burgers! A sausage patty, an egg and a hash-brown patty covered in cheese on a whole wheat bun served with hash-browns make my family go nuts! Even my 2-year-old managed to find room for a whole burger and 2 hash-browns.
I have a great cast-iron griddle and some great english muffin rings that make the meal SO easy to make! The sausage patties are formed inside the rings, placed on the griddle and grilled. Then, the rings get put onto the griddle and the eggs go into the rings to cook. Everything comes out the perfect size for the buns and they stack up great!
While I cook everything else, I can heat the oil for the hash-browns and everything gets done about the same time!
One thing to note about the simple kitchen theory is that I do not use paper towels to absorb oil. A cooling rack placed over a baking pan allows the oil to drain away from the food without making one side of the food soggy. This also allows potatoes to be seasoned without having the seasoning clump on the bottom of the potatoes!
