Wet Burritos - Beltline Bar style!

The Beltline Bar in Grand Rapids, Michigan is the home of the wet burrito. The story goes that a particularly rude customer sent a burrito back to the kitchen several times, complaining that the burrito was too dry. Apparently, the cook was having a particularly bad day, too. After attempting to correct the problem several times, the last time it was brought back to the kitchen, the cook mixed some brown gravy and taco sauce together, poured the sauce over the burrito, sprinkled some cheese and lettuce on top and sent the server back to the table with the message that now it was a “wet” burrito! The customer was thrilled with the idea of a “wet” burrito, and loved it. From that day forward, the new “Wet Burrito” has been one of their most popular menu items!

Being from the Grand Rapids area, I grew up eating wet burritos. It was not until my husband joined the Army that I really realized that NO ONE outside of Michigan had any clue what a wet burrito is! Needless to say, nowadays, if I want a wet burrito, I have to make it myself! Here is how to do it!

Wet Burritos

Flour Tortillas – Burrito size
Taco Meat (Beef, chicken, whatever you prefer)
Refried beans
Shredded Cheese
Salsa
Taco Sauce
Brown Gravy
Shredded Lettuce

1.) Preheat oven to 400 degrees.
2.) Prepare the taco meat, according to the directions on the seasoning.
3.) Heat the refried beans.
4.) Lay tortilla on a flat surface.
5.) Place taco meat, refried beans and shredded cheese in the center of the tortilla.
6.) Fold tortilla around toppings to make a burrito.
7.) Repeat steps 1-5 to make 4-6 burritos.
8.) Place burritos into a rectangular baking dish.
9.) In a medium sauce pan mix equal parts, taco sauce and brown gravy. Cook according to the directions for the gravy.

10.) Pour gravy mixture over burritos.
11.) Place in oven and bake for 45 minutes.
12.) Remove pan from oven, place burritos on plates, top with shredded cheese, lettuce and salsa. Sour cream can be added if desired.

Cedar Dogs... It's a local thing!

Okay, as promised, the next recipe in my list of comfort foods when I am homesick!

Cedar Springs is a small town, and the Cedar Cafe is (or was, if they closed) a small hole-in-the-wall kind of cafe. However, they are home to one of my favorite treats, Cedar Dogs! They are not healthy (imagine gooey melted cheese, cheap hot dogs, flour tortillas and bacon deep fried to perfection!), but they are incredibly tasty, and kids LOVE them!

Cedar Dogs
Hot Dogs
Shredded Cheese
Flour Tortillas
Bacon
Toothpicks
Deep Fryer

1.) Lay a tortilla on a flat surface.
2.) Sprinkle the tortilla with shredded cheese.
3.) Place a hot dog in the middle of the tortilla and roll the hot dog up inside the tortilla.
4.) Wrap strips of bacon around the tortilla and secure with toothpicks.
5.) Deep fry at 375 degrees until the tortilla begins to darken.
6.) Place on a cooling rack to drain excess oil.


Served with some ranch dressing (or for a more traditional taste, ketchup), these are a great snack or addition to a "fried feast"!

A Michigan Thing...

Okay, being an Army wife, it is hard not to get homesick every now and then. Lucky for me, Michigan has several food items that are VERY local, but also easy to make at home, even here in Oklahoma. As I am feeling homesick today, I thought I might share a couple of my favorite comfort food recipes that are super easy to make and downright delicious!

Olive Burgers

Hamburgers
Mayonnaise
Sliced Green Olives
Lettuce
Buns

1.) Cook burgers to desired temperature.
2.) Spread mayonnaise on both pieces of hamburger bun.
3.) Sprinkle the bottom bun liberally with sliced olives.
4.) Place burger on top of olives.
5.) Cover burger with a leaf of lettuce and the top of the bun.


Okay, so you have to like green olives in order to appreciate these burgers, but they are one of my favorite comfort foods when I am homesick. Olive burgers are sold at nearly every burger joint in Michigan, but once you leave, no one has them. There is nothing like an olive burger and fries to make me feel less homesick!

A few more Michigan treats to keep an eye out for (the recipes will be coming soon, I promise!) are Cedar Dogs - only available at the Cedar Cafe in Cedar Springs, Michigan (if they are still in business), and Wet Burritos - made to taste like the ones from the Beltline Bar in Grand rapids, Michigan!!!

Something Fishy

Okay, I have been sick for 3 days. I have a horrible cold, and I am perpetually exhausted. Therefore, last night for dinner, all I had the energy to do was to pull out my deep fryer and throw in some fish and fries. The fish was store-bought, but the fries and tartar sauce were home-made.

Chili to Goulash

Okay, a little over a week ago, I made a HUGE batch of chili to freeze for later use. However, as I was seasoning this chili, the top came off my cayenne pepper as it fell out of my cupboard and landed in the pot of chili. Needless to say, this chili quickly became 5-alarm chili! I froze it into 3 smaller containers, praying that I would find a way to cut the heat before serving it to my children.

Today, our weather turned a bit colder and chili began to sound good. However, I still had no idea how to reduce the heat of the pepper without adding more of everything (which I did not have). So, I decided to wing it, a bit

The Wonder of Salads!

Okay, I admit it. I did not cook tonight. I planned on cooking, but my husband was gone for the night and my children insisted on peanut butter and jelly. Who was I to argue?

Since I did not cook, I decided to make a killer salad once the kids were in bed. 2 cups of lettuce, 3 slices of Black Forest ham, 1/4 cup of shredded cheese, a bit of blue cheese dressing and a bit of Russian dressing with a slice of homemade wheat bread makes a great chef salad! The best part is that the entire salad is only 250 calories

The World of Tortillas!

I wanted something a little different for dinner tonight, so I opted for breakfast burritos! They are super easy and fast to make, and a great one pan dish!

I cooked up some hash-browns and set them aside first so that they would stay crispy. Then, I scrambled a dozen eggs with a can of drained Rotel tomatoes and chilis, some onions and a pound of smoked sausage. I broke up the hash-browns, added them to the pan to re-heat and warmed up a few tortillas

Spaghetti and Seasoned Bread

Dinner tonight was super easy, thanks to a little planning! My husband makes AMAZING spaghetti sauce, but being in the Army makes it hard for him to make it during the week due to his unpredictable schedule. So, I had him make up a double batch this past weekend and froze it!

I am not a superhero!

Someone accused me today of being "Super Wife". I am NOT a superhero! Well, not any more than our mothers, grandmothers, or aunts were. I do not have any more hours in a day than anyone else, I do not move at warp speed and I cannot leap tall buildings in a single bound. I am just a normal woman that manages her time well.

I am a SAHM, which means that I probably DO spend more time at home than most women these days. However, I am also a full-time student (I should receive my BA in Psychology Aug. 2012), a soldier's wife (wait, didn't I say that I did NOT have a full time job???), mother of 2 children too young to go to school, a freelance writer and a blogger. Most days, I WISH for a single full-time job

Busy Day in the Kitchen

My husband had the afternoon off today, so I took advantage of this and spent the afternoon in the kitchen! A loaf of bread, a pan of wheat rolls, a double batch of cookies and a beef roast later, my kitchen looks a bit like a tornado went through, but the food will last the rest of the week (except the roast, that is GONE!).

My secret to a perfect roast is a dash of liquid smoke and steak seasoning in a cup of water. This poured over the roast provides amazing flavor and tender meat, whether it is cooked in the oven or a crock pot. Today, it was the crock pot in order to keep the oven available for cookies and bread! The roast, potatoes and carrots went in around 1:00 and, cooked on high, was ready for dinner 4 hours later
